This Garlic Butter Sauce With Shrimp, Broccoli & Pasta Recipe is such a super tasty meal. If you haven’t noticed it by now, I love quick meals. And this meal is a very quick meal.
When you work a 9-5, the only thing you want to do is rest when you come home. You do not want to have to stand over a hot stove preparing dinner for hours. All you want to do is come home, settle yourself, settle your kids and lounge around until you have to reset the clock for the next day.
Also during school time for the kids, you do not want a meal that’s going to take 2 hrs to prepare. If you are a stickler for schedules like me. You like your children to be in bed by a certain time. So waiting up all night for dinner just isn’t going to fly.
So here is my Garlic Butter Sauce With Shrimp, Broccoli & Pasta. Hopefully this very meal can be added to your quick meal rotation.
1 Box Of Penne Pasta
1 Llb Of Deveined Shrimp
1 Bunch Of Fresh Broccoli
2-3 Springs Of Parsley (Minced)
1 Cup Of Scallion (Chopped)
1 1/2 Cup Of Butter
20 Cloves Of Garlic (Minced)
Season Of Your Choice Such As (Adobo, Black Pepper, Ground Mustard, Lawry’s Seasoning Salt)
1 Tablespoon Of Crushed Peppers (Optional)
1/2 Of Lemon (Optional)
Season shrimp and set aside for 30 mins to 1 hour. Bring pasta to boil in water with a teaspoon of oil. Take 1/2 cup of your butter and melt over a medium fire. Add crushed red peepers if you are using them, cook for about 5 seconds. Add shrimp, scallions and sautée until no longer opaqued, are curled, and a solid white in color.
Now your broccoli you can prepare two different ways.
1. You can either put a small pot of water boil, turn off the water, place broccoli in the water for 1 minute, then strain.
2. Sautee in a pan for about 3 minutes with 1 teaspoon of olive oil. Do not over cook!
Add the remaining 1 cup of butter and melt over a medium fire. Once melted add minced and sautée for 1 minute, then add pasta, shrimp, parsley, and sprinkle a little of seasoning to taste. Mix well to make sure all of your pasta and shrimp are well coated. Once you turn off your fire squeeze 1/2 of lemon to give you dish an extra kick!
