Hey guys! I know it’s been a while since I brought you any quick and easy recipes. Since it’s summer, it’s hot. I usually don’t feel like cooking, and we eat more take out then usual. Plus work has been exhausting, so I haven’t had much of the urge to actually write any new articles.
Luckily for you guys. I am sort of rested, and rejuvenated. Which means I am in the cooking mood (kinda) and the I am ready to share another recipe with you!
I have this awesome, quick, easy and most importantly kid friendly recipe for you. It is my take on hamburger helper. Since we don’t eat that mess in my house, I had to figure out a way to recreate it from scratch. For my little crumb snatchers. And it had to be good, cause let’s face it. Kids are your worst critics!
So if your interested, keep reading. I promise you won’t be disappointed!
1 Llbs of Elbow Macaroni
1 Llbs Of Ground Turkey
1 Tablespoon Of Vegetable Oil
1 Bar Of Extra Sharp Cheddar Cheese
1 Bar Of Swiss Cheese
16 oz Of Mild Picante Sauce
8 oz Can Of Carnation Milk
1 Green Pepper
1 Red Pepper
1 Tablespoon Of Flour
3-4 Springs Of Parsley
Preheat oven on 350.
Season your ground beef how you would normally season your meat. I used the regular stuff such as Adobo, Garlic Powder who knows what else. Sorry I just threw in whatever seasonings I felt needed to be in the meat, lol.
Cook your macaroni according to the directions on the package. Drain and set aside.
Cut up your onion, red and green peppers. Heat pan and then add oil. Allow oil to heat up for about 1 to 2 mins. Add onions and peppers. Stir fry for about a minute, then add ground turkey.
Allow the ground turkey to until it is no longer pink. You can drain, I don’t personally since it’s not ground beef and does not have all of that oil build up. Ground turkey instead creates a bit of a juice. Add picante sauce to ground turkey and mix.
In a separate pot heat for about 2 minutes and then add flour. Shift flour and allow it to turn a light brown. Then add the can of carnation milk, with a 1/2 of water.
Now I know some of you are like carnation milk? Yes carnation milk. I unfortunately do not use white water, aka white milk. So anytime I need to use milk, I use carnation milk. Cakes, gravy, bake Mac and cheese, I use carnation milk. If you prefer to use white water, then be my guest.
As the milk begins to heat up cut half of both cheese me and add. Cook until you have cheese sauce. You can also add a bit of seasonings to the cheese sauce.
Add the macaroni, and meat mixture to the cheese sauce, and then add everything to a baking pan. I also cut up some more of the cheese, leaving just enough to grate and use as a topping. The cheese that I cut up I just add in the macaroni in random places. The add the remaining grated cheese to the top.
Add your pan to the preheated oven and allow to cook for about 40 minutes. Or until the top is nice and melted.
Once taken out of the oven, you can garnish with parsley. And just like that your done! Not exactly one of my 30mins or less meals, but it is one of those easy recipes.
